Okay…on to the recipe!
This is for freezable Breakfast Rolls! These are very yummy, easy to put together and great for a quick, delicious breakfast!
To begin with I made my cinnamon roll dough in my breadmaker. If you have another roll or bread dough you’d like to use, give it a try! 🙂
While my dough is going I scramble 8 eggs and brown 1 lb of ground breakfast sausage. I used Farmland’s Best Original Pork Sausage. Also I bought shredded cheese, but if you have block cheese, use this time to shred it. I used about 1.5 cups…feel free to use more if you like extra cheesy rolls! 🙂 Then chop 1/2 of a green bell pepper.
So once my dough is complete I roll it out in to the best rectangle I can…which usually isn’t very good, but that’s okay! I rolled this out thinner than I do for cinnamon rolls.
Next layer on your sausage, eggs, peppers and cheese.
So here is the picture of my sausage all spread out…yeah, I could have SWORN I took a picture of the whole thing layered with the eggs, cheese and peppers too…apparently not! SORRY!
Now it’s time to roll it up like you would with a cinnamon roll. (Never rolled up a cinnamon roll before? Head over to this post!) Once you get it rolled up, use a serrated knife to cut your rolls. I cut them in smaller slices than I do for my cinnamon rolls. I was able to get 18 rolls, 6 in each pan.
Even unbaked they look yummy! When I do freezer meals I use my Pyrex glass pans. But once I run out of those, I head to the Dollar Store and stock up on their foilware. (You can also get some here) You can usually get 2 or 3 in a pack for $1.00. And the bonus is the round ones come with lids! 🙂
Get this bad boy covered up and pop it in the freezer until you need it!
If I’m not using my Pyrex I write the instructions on the lid or top foil of the meal. That way if I’m out of town (or my husband wants to be a sweetie and make breakfast or dinner for us. :-)) whoever grabs a meal out of the freezer knows what to do. For this one…
Put in fridge the night prior (to thaw), then let sit uncovered while oven heats to 400°F. This will give your dough a bit of time to raise. After that bake for 20-25 mins, give or take depending on your oven. I’ve never baked these from a frozen state, so I couldn’t tell you how long that would take.

Have you ever made them in a 9×13? Just wondering how that would work.
If I didn’t want to make the dough from scratch, would pre-made breadstick or pizza dough be a suitable replacement?
Yes! using a premade pizza dough would work just fine! 🙂
How much pizza dough should I use?
I didn’t use pizza dough, I used my cinnamon roll dough. If you are using pizza dough to serve about 4 people, you’d probably need 2 of the rectangle premade pizza doughs.

Have you microwaved them? How do you think it would work?
I have not microwaved them, only premade them to be baked in the oven. I’m not sure it would have the same texture if it were microwaved.
