Here is another great freezer meal for you! Chicken Manicotti! My family LOVES this. It freezes so well and tastes great!
1 jar-28.5 oz. spaghetti sauce
1 tsp. garlic salt
1 1/2 lbs. chicken breast (cooked)
8 oz ricotta cheese
14 uncooked manicotti shells

1/2 cup cream of mushroom soup
1 bunch (about 5) green onions chopped
2 cups shredded Mozzarella cheese
You are going to want to spread about 1/3 of the can of pasta sauce on the bottom of your container (I used a 9 x 13 glass pyrex pan). After that chop up your chicken breasts into bite size pieces. Mix your chicken with your ricotta cheese, cream of mushroom soup, garlic salt, and chopped green onions.
This is where it gets a little messy. 🙂 Using your hands, fill the manicotti shells with your chicken mixture. Sometimes it’s easier to fill from both ends. Place the filled shells in your pan.
You should be able to fit 9 across the top vertically, four across the bottom horizontally and one between the horizontal ones, placed sort of diagonal. Does that make sense? Anyway, cover the manicotti with the rest of the pasta sauce and then cover with the mozzarella cheese.
Cover with foil well and place in freezer. This meal will be great in your freezer for up to a month! When you are ready to use it, let it defrost for 1.5 hours and preheat your oven to 350°F. Bake covered for 1.5 hours or until the shells are tender. If your meal has been defrosting overnight your cooking time will be less. This is one my family love and I hope you all enjoy it too!
