I’m really not a fan of Taco Bell. My husband and kids love it…but to me, I’d much rather have Taco Time if I’m eating fast food “Mexican food”. ๐ But one of the things I do really like at Taco Bell is their Mexican Pizza. I don’t know why, but it always tastes SOOOO good to me. As I was thinking about our dinners for the next week, I was thinking…I bet Mexican Pizza is SUPER easy to make. So I decided to give it a try. ๐
Here’s a list of what you will need…and also a short list of what I wish I had! ๐
Mexican Pizza
10 tortillas, 4 – 6 inches
2 cans of refried beans, heated on the stovetop or in the microwave
1lb ground beef, browned
1 packet of taco seasoning (I used mild)
2 cups shredded cheese (a Mexican blend works best)
1 cup salsa (I believe Taco Bell uses enchilada sauce, but we love our salsa!)
Toppings of your choice…I wish I would have had
Olives
Sour Cream
Avocado
Diced tomatoes
Start by preheating your oven to 350°F. Spray a cookie sheet with non stick spray and bake your tortillas. In my oven it took 5-6 minutes on each side to make them crunchy. As you are baking your tortillas, brown your ground beef and add the taco seasoning. Also heat your refried beans.
Once your tortillas are baked, start building your pizza!
Take one tortilla and spread a good layer of beans, add a sprinkle of cheese, add a layer of ground beef, add another sprinkle of cheese and place the second tortilla on top. Add 1-2 tablespoons of salsa on top and spread around. Give another good sprinkling of cheese and bake for 3-5 minutes until cheese is melted.
After you remove it from the oven, let it sit for a couple of minutes and then add your desired toppings. Serve and enjoy!
