While I was checking out Pinterest one day, I found this recipe from Lulu the Baker!
I immediately wanted to try it because I knew my family would just love it.
Vegetable Cheese Chowder
Adapted from Lulu the Baker
3 tablespoons butter
1/2 finely chopped onion
1 1/2 cups shredded carrots
3 celery sticks finely chopped
1 heaping tablespoon minced garlic
4 cups low sodium chicken broth
2 large baker potatoes, peeled and chopped
1/2 tablespoon cornstarch
1/2 cup water
2/3 cup milk
3 cups chopped broccoli
2 heaping cups shredded cheddar cheese
Salt and pepper to taste
In a large pot melt your butter. Add your onion, carrots, celery and garlic, saute for 3-4 mins. Add chicken broth and potatoes, bring to a boil and cook until potatoes are just tender. Whisk cornstarch with your water and add to your chowder and simmer until chowder thickens a little. Add milk and broccoli and cook until broccoli is tender. Stir in cheese and mix until melted. Serve and enjoy!
There was NOTHING left from this chowder! We devoured it! Even my husband who does not like broccoli loved it! I hope you love it too!
