If you are following the Keto diet, you are going to love our Keto Club Sandwich. And guess what? Even if you aren’t following the Keto diet, you are still going to love it! It’s so delicious and super filling!
My husband was talking to me about the Keto diet. Giving me a quick overview, he was telling me it’s basically a high fat, low carb, moderate protein plan. I’ll be honest that as soon as I heard “low carb”, my ears gave up. I LOVE carbs, so I was glad this was something that he liked, but in no way was I giving up my sandwiches! Sandwiches are literally my favorite! Well I’m here to tell you that this “bread” works perfectly for sandwiches and this sandwich was delicious! Not to mention that it’s also gluten free as long as you check your ingredients on your cheese!
Let’s get into this recipe so you can make sure and enjoy all this deliciousness!
Keto Bread
1 1/2 cups shredded mozzarella
3/4 cup almond flour
2 tablespoons cream cheese
1 egg
1 tablespoon butter, melted
Directions:
Preheat oven to 425°F. Prepare a baking sheet with parchment paper, set aside. In a medium, microwave safe bowl melt your mozzarella and cream cheese for 1 min. Stir and then microwave again for another 30 seconds. Stir again and then add your almond flour and your egg. Take your dough, using your hands, spread it into a thin circle on your parchement lined baking sheet.
Poke holes in the dough with a fork to prevent bubbles. Brush half of your melted butter on top and place in the oven for 7-8 minutes. Using a large spatula, flip your bread over back onto the parchment lined baking sheet, brush with the rest of the butter and bake for another 3-4 minutes. This will make both side nice and brown. It gives it a great crunch.
While your bread is cooling a little, prepare the other ingredients for your sandwich.
4 slices black forest ham
2 slice roasted turkey breast
4-6 slices of cooked bacon, cut in half
2 slice provolone cheese
1/2 avocado sliced
4 tomato slices (optional)
baby spinach or lettuce (optional)
2 tablespoon mayonnaise
Cut the Keto bread into 4 quarters for two sandwiches. Spread the mayo on the bread slices and build your Keto Club sandwich. Serve with some of your favorite veggies and enjoy!
