I recently needed a little treat to take to my neighbors who just moved in and when going through my recipes I found this gem. I haven’t made these for so long I had forgotten about them but originally I found this recipe in Paula Dean’s book “Lunch Lady”. This is a easy recipe made with a cake mix. It made me happy to make them again. I was reminded how delicious and moist these mini muffins are. Lemon usually isn’t a flavor I choose but the glaze on these is just the right amount of sweetness and the lemon is refreshing. I love making things “mini” because they are so cute and if you don’t eat too many of them you can keep your calorie count down… which is a good thing.
Ingredients you will need:
1 Yellow Cake Mix
4 eggs
1 box lemon pudding (3.5 oz)
3/4 cup oil
Beat together all ingredients 2-3 minutes.
As you can see the texture is very dense so the consistency of the batter will be thick.
I use a small ice cream scoop to fill the mini muffin tins (be sure and grease because they tend to stick)
Bake @ 350 for 10-12 minutes
after baking the centers will drop which leaves a little cup for the glaze.
Lemon Glaze:
1/2 bag of powdered sugar
lemon zest
1 1/2 TBSP oil
1 1/2 TBSP water add slowly (more if needed)
Juice from 1/2 of a fresh lemon
You can drizzle or even dunk them completely.
Set on a rack to dry.
