Even though we still have some snow on the ground here in Utah, I’m trying to look forward to the fact that Spring is hopefully just around the corner. It feels super Spring-ish to have my kitchen smell all lemony fresh delicious! I found a delicious Lemon Yogurt Cake recipe from Barefoot Contessa. I was super happy with the way this came out and hope that you enjoy it too!
Lemon Yogurt Cake
Adapted from Barefoot Contessa
3 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 cups lemon yogurt
2 cups sugar
6 eggs
4 teaspoons lemon zest (2 large lemons or 3-4 small lemons)
1 1/2 teaspoons vanilla
2/3 cup oil
Preheat oven to 350°F
Grease and flour three 8″ x 3 7/8″ x 2 1/2″ loaf pans (or two 8 1/2″ x 4 1/2″ x 2 1/2″).
In a medium size bowl, sift together flour, baking powder and salt.
In stand mixer, mix on medium low, yogurt, sugar, eggs, vanilla, and lemon zest. Reduce mixer speed to low, slowly add flour mixture to batter. Add oil, mix until just combined.
Pour equally into prepared loaf pans. Bake on middle rack for 50 minutes.
Let cool for 10 minutes on a rack. While cooling, combined 1/2 cup sugar and 1/2 cup of lemon juice in a sauce pan and boil on low until a clear liquid. Set aside.
While taking pictures, these two little goofy boys wanted a picture! ๐
Remove from loaf pans and set on cooling rack. Place a cookie sheet under the cooling rack and use a toothpick or skewer to poke several in each loaf.
Spoon the simple syrup over each loaf and let soak in until cooled.
Slice, serve and enjoy!
