The other night I was trying to decide what to make for dinner. It was a busy night and I couldn’t think of anything. I knew I had chicken in my house so I headed over to pinterest and typed in Chicken Casserole (am I the only one who does this?).
I would not call this recipe a casserole but I would call it delicious and easy! I love that this is a complete chicken dinner in just one pan, easy clean up has to be a mom’s favorite right!?
I found it over at Recipe Binder. I’ll be honest, I kind of expected this one to just be food we could eat. I wasn’t expecting fantastic but it really was.
For my family of nine I used:
8 chicken breasts
4 cans of cut green beans
10 potatoes
1 cup of butter
2 packages of Italian dressing mix
I expected leftovers. I was foolish. We maybe had a half a cup of green beans left, if there had been more potatoes and chicken it would have been eaten. The chicken was incredibly moist, the potatoes were cooked through, the beans were nice and hot, and everything was very flavorful.
I split everything into 2-9×13 casserole dishes. My chicken was probably still 80% frozen (so you know it doesn’t need to be totally defrosted). Lay things into the casserole dish as show in the photo. I sliced up my sticks of butter and spread out over the chicken, potatoes, and green beans. Then sprinkle a package of Italian dressing over the top of everything. Cover with tinfoil and bake for an hour at 350°.
When I told Paula about how great this recipe turned out she said “Oh, I’ve seen that, our cousin recently made it!”. She mixed it up a little bit with red potatoes and Italian seasoning if you want to try that check hers out.
