I love pumpkin flavor…pies, cookies, cupcakes, really anything pumpkin is delicious! Luckily my family is on board with my love of pumpkin. When I was planning my weekly menu (look at me being all proactive!) I thought it would be great to do a Pumpkin Spice Pancake breakfast. It’s turning just a touch cooler in the mornings and warm breakfasts are going to be on the menu a lot more.
Pumpkin Spice Pancakes

2 13 cups flour
2/3 cup sugar
In a medium bowl, mix together your flour, baking powder, pumpkin spice, nutmeg and cinnamon. in another bowl mix your milk, pumpkin puree, sugar, and oil. Add your flour mixture and mix until well combined. This mixture will be a little thicker than a normal pancake batter. Heat your griddle to medium, and cook as normal. This batter won’t bubble as much as a regular pancake batter, but I found that I was cooking each side for about 1 1/2 to 2 minutes. These pancakes are moist and dense, and delicious with butter and syrup or just plain!
My kids told me it was the BEST breakfast ever! That’s always a good thing to hear. 🙂 Enjoy!
