I have a baptism to go to today and I offered to bring a dessert. I was thinking what to bring (since I just did the snickers cupcakes again on Thursday for cardswap I didn’t want to do those again) and remembered these super yummy cookies my friend Shelly made and that she told me she had the recipe on her pinterest board.
The Rolo cookies only have 4 ingredients which is good for me and they bake super fast which is another YAY.
1 box devils food cake
2 eggs
1/3 cup vegetable oil
1 package of rolos
Mix all ingredients except rolos and then roll a ball of dough around a rolo, use only enough to dough to cover the rolo and that will help it spread throughout the whole cookie.
Bake at 350° for 7-8 minutes.
The pinterest link for the recipe took me here. There are a couple things that they didn’t note that I wanted to mention that happened to me.
1. I used a regular small spoon and grabbed a scoop of the dough (it is quite stiff but that is good) and that was pretty perfect to have enough to go around the rolo without having too much.
2. The cookies were done when they were just starting to flatten and split a little along the edges.
3. A couple cookies from my 1st batch were a loss of rolo casualty. I had let them cool on the cookie sheet for about a minute and then moved them to a cooling rack and the rolo fell out the bottom! So I suggest (and it worked for me with no other accident) leaving them on the cookie sheet for about 3 minutes and then transferring them over.
4. They said the recipe made about 3 dozen cookies, I doubled the recipe and I only got exactly 4 dozen cookies so that is something to note also.
I also really do recommend dusting them with the powdered sugar, it makes them extra yummy!
