I was looking around on Pinterest the other day for some different muffin recipes for my kids. I came across these snickerdoodle muffins and knew I had to try them. I love snickerdoodles so I thought if they taste anything like the cookie they have to be good. I was right they were delicious! I ate one when it was still warm out of the oven and wow it was so good. It just melted in my mouth! My husband tried one and loved it and asked if I could make them everyday. They were a huge hit with everyone!! I’m pretty sure I could have eaten the whole pan which is probably not a good idea. I couldn’t decide if I liked them better warm out of the oven or later when the top of the muffin got a little crunchy with the cinnamon and sugar mix and the inside was still so soft!
Ingredients;
2 cups of flour
1/2 tsp. salt
2 tsp. cream of tarter
1 stick of butter (softened)
1 tsp. baking soda
2 eggs
3/4 cup sugar
1 cup milk
1 1/2 tsp. vanilla
1 Tbs. sugar and 1 tsp. cinnamon mixed together for topping. ( I used a little more sugar it was a little too much cinnamon and strong for me)
Directions:
1. In a bowl cream together the butter and sugar. Then you will add the eggs, milk, and vanilla. Mix well.
2. In a separate bowl stir together the flour, salt, cream of tarter and baking soda.
3. Add the flour mixture into the wet ingredients just until moistened .Do not over mix.
4. Fill muffin cups 2/3 of the way full and sprinkle the cinnamon sugar mixture on each muffin.
5. Bake at 375 for 15-20 minutes.
