I was helping out as a judge for our church’s youth activity of Iron Chef and visiting with my friend Kristin who was also a judge. I told her how I wanted to make a chocolate chili cupcake really bad! She gave me kind of a funny look and said “A chocolate chili cupcake?!” I said yes, you know like a spicy chocolate cupcake. I could see the relief on her face and she said “OH! I thought you meant a chocolate cupcake with chili on top!” It was really funny! 🙂
Anyway, I’m please to present you with a yummy, spicy chocolate cupcake that I am in love with!
Spicy Chocolate Cupcakes
Preheat oven to 350°F. In stand mixer, add all ingredients and mix until well combine. Don’t over mix. Fill cupcake liners with 3 oz of batter. Bake for 15-20 minutes. Cool completely before frosting.
8 oz cream cheese, softened
4-5 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon chili powder
In stand mixer beat cream cheese until smooth. Scrap down and add vanilla, cinnamon, nutmeg and chili powder until well blended. Add milk and powdered sugar, one cup at a time until you reach your desired consistency. Pipe onto cooled cupcakes.
I loved the flavor of these cupcakes! I can’t do really spicy, so the combo of sweet and spicy in this worked perfect for me. The boys also ate theirs and loved them! Josh’s only critique was he wanted it to be more spicy. 🙂 So give these a shot and enjoy!
