Once upon a time there was a girl, she was addicted to girl scout cookies. I am that girl. “Hello, my name is Jenn and I’m a Girl Scout Cookie Addict”.
I had one box of Thin Mint cookies left from last year and thought they’d make a fun St. Patrick’s Day treat. I broke out all the typical Rice Crispy Treat ingredients and went to work.
Thin Mint Rice Crispy Treats
(starts with the normal Rice Crispy Treat recipe)
- 3 tablespoons butter or margarine
- 1 package (10 oz., about 40) regular marshmallows
- — OR —
- 4 cups miniature marshmallows
- 6 cups Kellogg’s® Rice Krispies® cereal
- 1 sleeve Thin Mint Cookies
- Melting Chocolates
- Green food coloring (optional)
Directions:
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. (I added the food coloring to the marshmallows while they were melting.)
2. While marshmallows are melting chop up cookies (I left them in somewhat bigger chunks so it wasn’t just thin mint powder) and mix in with dry cereal.

3. Add KELLOGG’S RICE KRISPIES cereal and cookies to melted marshmallows. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.

4. Let cool.
5. While they are cooling melt your chocolates (I used Baker’s Dipping Chocolate milk chocolate cup).
6. Cut cooled treats into 2″ squares, dip in chocolate (I just dipped the bottom), and place on wax/parchment paper to cool.
Store in air tight container, best if served the same day.
What is there to say? They were DELICIOUS. It was a good thing I decided to make them the day BEFORE I was going to start being good again because I couldn’t stop eating them. The kids and Nate all loved them as well, the whole pan lasted less than 24 hours.
Make some up, you won’t be sorry!
