We had a yummy Saturday morning brunch of Strawberry and Cream Cheese Stuffed French Toast. It was supposed to be breakfast…I had grand plans of waking up early and having breakfast ready for everyone when they woke up. But the boys let us sleep in, so it turned into a brunch. ๐
I started out by slicing 1 lbs of strawberries.
Next I prepared my filling. I used about 1/4 cup of milk, 4 oz of softened cream cheese and 1 to 1 1/2 cups of powdered sugar. Mix those together with a hand mixer or whisk. If there are some small cream cheese lumps, that’s okay. ๐
I wanted my mixture to be spoonable because I didn’t want to have to try to spread it while it was on the griddle.
Next I prepared my egg mixture. Feel free to use your tried and true french toast mixture. This one consisted of 3 eggs, about 3/4 cup of milk, 1 teaspoon of vanilla, 1 teaspoon of cinnamon and a dash of nutmeg. You will also need approximately 16 slices of bread.
Dip just one side of your bread into the egg mixture.
Place the bread, mixture side down on the griddle. Next spoon some of the filling on to your bread. And layer the strawberry slices on top of the filling.
I think I used about 1 to 2 tablespoons of filling on each piece of bread.
Dip your second piece of bread, just one side and place it egg mixture side up on the first piece of bread. Then flip. You’ll have to do this carefully because it’s not like a grilled cheese sandwich where the cheese keeps to the two pieces of bread together. ๐
The filling and strawberries were more than sweet enough that we didn’t need any syrup at all. ๐
We just topped with a few dollops of whipped cream and it was delicious! Enjoy!
