My family loves breakfast…a few times a month we even eat it for dinner! Pancakes are one of our favorites. Simple and yummy. Since we are totally happy with Krusteaz pancake mix, I’d never even attempted to make them from scratch. Well the day after Easter we had one last day of spring break. For Easter dessert I’d made a strawberry triffle and had some left over strawberries, so I decided to make strawberry shortcake pancakes. My only problem was that we were out of pancake mix! So I quickly hopped online, knowing I should be able to find an easy, yummy pancake recipe. I was super lucky and found Somewhat Simple‘s fantastic recipe! She said her grandmother’s pancakes were the best and her aunt had found this recipe that came the closest to them. I added only one ingredient to make them for my strawberry shortcake pancakes and fully plan on never buying pancake mix again!
The first thing I did was prepare my strawberries. I washed, dried and sliced 1.5 lbs of strawberries. I put those into a bowl and added about 3/4 cup of sugar. I mixed well together and then used my masher to mash up the strawberries a couple of times. I set that aside in the fridge while I made my pancakes.
Strawberry Pancakes
Recipe Slightly Adapted from Somewhat Simple
Whisk together…
2 2/3 cups sifted flour
2 tablespoons baking powder
1 cup sugar
1 teaspoon salt
In a separate bowl beat together…
4 eggs
2 cups milk
4 tablespoons cooking oil
2 1/2 tablespoons strawberry extract
Add wet ingredients to dry ingredients and mix until just moistened. DO NOT over mix, the batter will be lumpy. Cook in pan or on griddle.
Take your desired number of pancakes and top with sliced strawberries from your chilled bowl and add some whipped cream on top!
My kids loved these, and I have to admit that so did I! 🙂 Enjoy!
