I just love sweet potatoes. Pretty much any way they are prepared I will eat them. My kids are a little more finicky when it comes to sweet potatoes. They don’t love sweet potato fries all that much and a baked one isn’t super appealing to them either. But if I mix in some brown sugar, butter, and marshmallows, they are ALL over it! This Sweet Potato Casserole is one of my favorite recipes, it’s so simple and delicious, but I can’t make it very often because my kids (especially my oldest) will eat themselves sick!
Sweet potato casserole is perfect for a Thanksgiving side dish. It has such a great flavor and just bring a great element to the whole meal. And because of the marshmallows, my kids see it as more of a dessert than a side dish!
Sweet Potato Casserole
2 – 29 oz cans of sweet potatoes, drained (or you can fresh that you have peeled and steamed)
1/2 cup of brown sugar, packed
4 tablespoons salted butter
4o regular size marshmallows
Directions
Preheat your oven to 350 degrees. In a 9 x 9 pan, add your sweet potato pieces. Next sprinkle your brown sugar evenly on top. After that, cut your butter into chunks and dot on top. Lastly, you’ll layer your marshmallows on top. Place in the oven and bake for 20 minutes or until it’s hot all the way through and the marshmallows are nicely browned. Serve along side your favorite meal and enjoy!
