I’m so grateful that my kids love to eat veggies without any complaining. However, I always want to mix up the way I prepare our veggies so that my kids don’t get bored with them. I love this Oven Roasted Maple Honey Carrots recipe because it’s easy and we love it!
This also look great on the table so it would be a perfect addition to your Thanksgiving meal.
Oven Roasted Maple Honey Carrots
1 lb baby carrots
1 tablespoons extra virgin olive oil
2 tablespoons maple syrup
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon granulated garlic
1/4 teaspoon season salt
1 green onion, finely chopped white part separated from the green part
Preheat oven to 425 degrees. Mix all your ingredients except the carrots and green part of the onion in a small bowl. Lay out your carrots in an oven safe dish and drizzle the maple honey mixture over the carrots and toss so the carrots are covered. Place in oven and bake for 8 minutes, then stir. Cook for another 10-15 minutes, stirring every 5 minutes. Carrots are done when they are tender and your ends might be a touch caramelized. Sprinkle on your remaining green onion to add a little extra color. Serve along side your favorite main dish and enjoy!
This recipe will serve about 4. It’s easily doubled, just make sure that you adjust your cooking time also.
