TACO BITES

Like everyone else’s kids, when my kids run in the house from school they want to know what they can eat. They come home from school so hungry and just need something to get by until dinner.

These taco bites have been a real hit and they are so simple to make.

I usually make these when I have leftover taco meat from dinner the night before.

To cut out the circles I used a cup but you can use just about anything. You can get 7 circles from one tortilla.

This step is not necessary but I fry them for a minute in a little oil just to give them a little crunch. If you choose to fry them you have to work fast after you take them out of the oil to press them into the mini muffin tins to take their shape before they cool.

Next fill them with the taco meat and cheese. Bake in the oven for 7-10 minutes or until the cheese is bubbling. If you notice in this picture I shoved the tortilla scrapes in the last few….. so not to waste. They aren’t pretty but taste just as great.

Top with tomatoes, sour cream, olives or chopped green onions. They taste amazing and this yummy little bite leaves you wanting more. These are a great appetizer for any party as well. Quick and cheap.
