It’s past Thanksgiving, and we have all leftovers! Sometimes it’s hard to thinking of what to do with all the leftovers. For me it’s always turkey sandwiches…but my family gets kind of bored with those. ๐ So here’s another idea I came across…Thanksgiving Casserole! And the great thing about this…is you don’t have to use leftovers, you can make it from scratch if you want. ๐
Thanksgiving Casserole
Adapted from Taste of Home
6-8 medium potatoes, peeled and cut into chunks
1 1/4 chopped celery
1/2 cup chopped onion
1/2 cup butter
1/2 teaspoon sage
1/2 teaspoon salt
1/2 teaspoon pepper
6 cups stuffing cubes
1 1/4 cups chicken broth
4 cups chopped turkey
2 cans cream of mushroom soup
1 teaspoon garlic powder
3/4 cup sour cream
4 oz cream cheese, softened
1 1/2 cup shredded cheddar cheese
In large stock pot, boil potatoes until tender. While those are boiling, saute butter, onions and celery until tender. In large bowl combine stuffing cubes, salt, pepper and garlic. Stir in chicken broth and celery mixture. Spread in the bottom of a greased 9 x 13 casserole dish.
In separate bowl mix turkey, 1/4 sour cream, and cream of mushroom soup. Spread over the top of the stuffing mixture.
Drain potatoes, mash and mix in remaining sour cream, cream cheese and salt and pepper to taste. Spread over turkey mixture and sprinkle with cheese.
Bake at 350°F for 30 mins or until hot all the way through. Remove from oven, let cool for a few minutes and serve.
If you are using all your leftovers, just mix your turkey with the sour cream and cream of mushroom soup and use your leftovers for the rest! ๐ Enjoy!
