Here are the ingredients that you will need…
5-6 russet potatoes, baked (I use my Round Covered Baker)
1/2 lb of bacon, fried crispy
2 teaspoons granulated garlic
2 1/2 teaspoons dried parsley (if you prefer fresh, make sure it’s chopped fine)
4 oz shredded cheese of your choice
3 oz cream cheese, softened
4 tablespoons margarine
1/4 cup milk
Salt and Pepper to taste
While your potatoes are baking, fry up your bacon. Drain your bacon on a paper towel and let cool just a bit. Once slightly cooled chop in to small pieces.
When your potatoes are done, mash them with the skin still on. Add the margarine, cream cheese and milk as you are mashing. Once those are well combined, add most of the bacon (reserving a small amount for topping), the shredded cheese (also reserving a small amount for topping), garlic, parsley and salt and pepper. Mix until well incorporated. Top with the reserve cheese and bacon, cover and place back in the oven for 3-5 minutes until topping cheese is melted.
This is SOOOO yummy and my family gobbled it up! Enjoy!
