It’s hard to believe we are already heading into August! Sadly, two of my kids have already started school, so their lazy days of summer have already come to an end. I’ve been trying to think of snacks I can feed my kids after school because they always come home so hungry. I wanted something that was filling but not full of sugar. These No Bake Peanut Butter Oatmeal Bars were the perfect answer to what I was looking for. They are full of flavor and a much healthier choice than a cookie or potato chips. They only call for 3 ingredients so they come together in no time. This is definitely a recipe you can get your kids involved with. We whipped these bars up in no time one day after school!
Recipe:
Recipe for No Bake Peanut Butter Oatmeal Bars:
1/2 c. creamy peanut butter
3 cups oats ( I used the old-fashioned oats not the quick oats)
1/2 c. honey
Melt the honey and peanut butter over medium heat. After mixture is melted and creamy add oats, mix well. Line a 9 x 9 pan with tin foil and spray foil with cooking spray (this makes clean up a breeze), place oatmeal mixture into pan and press down firmly. The bars will be a little gooey and soft. You can put them in the refrigerator to firm them up. Take the foil out of the pan and cut your bars into squares and ENJOY!!
We melted chocolate chips and drizzled it over half of the bars, because everything is better with chocolate… right???
My kids are already thinking of different things they can add into these bars for next time we make them. They want to try chunky peanut butter instead of creamy and maybe chocolate chips?? I thought it might be fun to roll them into little balls and store them in the fridge also. We will definitely be making these again soon. My kids think these bars taste like the crust of a peanut butter bar, so that may be the reason they liked them so much, because they love peanut butter bars! They were also very filling because of the oatmeal so your kids won’t be hungry 5 minutes later, which is always a good thing around my house.
