Halloween has to be one of the most fun times of the year. We love to decorate, plan out our costumes, and of course have tons of delicious treats! For me, Halloween kicks off the holiday season. While I feel that once it’s here the rest of the year just flies by, we try to take our time to enjoy each holiday. Caramel apples are a favorite fall treat for most people, and my family is no exception. But this year I thought I’d switch it up a little and make Candy Apples instead. Of course since it’s getting close to Halloween, I decided to make them Perfectly Poisoned Apples!

These candy apples aren’t at all hard to make, and only take a little bit of a learning curve to get a nice, smooth coating. One important thing to remember is that these apples don’t have a coating that is ooey gooey like caramel apples. These have a hard candy shell that will take a little more getting used to when it comes to eating them.
Perfectly Poisoned Apples
2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 tsp black food coloring
6 green apples
6 wooden skewers
Directions:
First, you’ll want to prep your apples. Give them a good wash, dry them, take out the stem and stick your wooden skewers in. Set to the side. Have a sheet pan ready with parchment paper to set your candy apples on. Combine your ingredients in a medium saucepan. Fix your candy thermometer to the side of your pan so you can keep an eye on the temperature. You’ll also want a small cup of water and a pastry brush to brush down the sides of your sauce pan while the mixture is boiling to keep crystals from forming.
You will bring your mixture to a boil over medium high heat. Once it starts boiling, do not stir! You’ll have to fight all your urges to give it a good stir, instead, continue to brush down the sides of the pan with water.
When your mixture reaches 290°F (on your candy thermometer it will say “hard crack”), remove from heat. Let cool for about 30 seconds. Give the mixture a couple of stirs to break up the bubbles. The mixture will start to look smooth.
Now you will need to work quickly. Tilt your pan to the side and dip your apple in. You’ll want to go up high on the top, but not all the way to where the stick is. Let the candy mixture drip off for a few seconds and then hold the apple upside down for a few seconds to reduce the amount of pooling. Set on your parchment paper to cool for 30-45 mins before serving.
You might have some bubbles and that’s okay! To me, it makes them look kind of warty. 🙂 But with a little practice, you’ll get a mirror smooth surface…which is not great for taking pictures because you can see my reflection in almost every one!
You can change up the color by adding some purple or blue to give them an even more evil look. Enjoy these tasty treats!
