So I’ve been trying to mix things up with our meal rotation, without upping how much we spend on groceries. With Summer being here, we’ve been grilling a lot of hamburgers…and I figured as much as we LOVE a delicious cheeseburger, we might be a little hamburgered out. So I decided to give a try for Beef Empanadas. Now I’ve never made them before, but I googled and saw that they were pretty easy. For my recipe you are going to need…
3/4 lb of ground beef
1/4 cup onion, chopped
3 cloves garlic, minced
1 teaspoon ground oregano
Salt and pepper to taste
1 cup shredded cheese of your choice (I used a cheddar/Monterrey jack blend)
2 refrigerator pie crusts (if you have a great homemade pie crust recipe, that would be fantastic but I was on a time crunch. :-))
Brown your ground beef and add onion and garlic while browning. Season with oregano, salt and pepper.
Using a round cookie cutter about 3″ in diameter (or a lid like I did!) cut circles out of the premade pie crust. You should get 12-16 rounds out of the pie crusts…depending on if you want to roll out the scraps or not.
Fill each round with about a teaspoon of shredded cheese and a tablespoon of ground beef. Fold the crust over and seal the edges with a fork.
Place on a cookie sheet or baking stone and bake at 425°F for 13-15 mins. If you want your empanada crust to have the glossy look, mix an egg white with about 3 tablespoons of water and brush on with a pastry brush.
My family really loved these! And if you want to make them larger, you certainly can! Enjoy!
